Every day, these markets connect producers, aggregators and transporters, to last mile vendors and consumers. In the markets, consumers' dietary choices are influenced by culture, what they learn about food and their access to affordable, safe, sustainable healthy foods.
These markets are fundamental to the resilience of multiple supply chain sector stakeholders and the wellbeing of natural ecosystems. Urban planning, local economic development, digital platforms, infrastructure investment, regulatory frameworks and inclusive food systems governance are key tools city governments can use to achieve the goal of resilient, sustainable and healthy food environments.
